Tips for Making This Icebox Cake with graham crackers
Even though this no bake dessert isn’t hard, there are a few things to keep in mind.
Using fruit that is in season is always going to have the best taste results. I find that fresh strawberries and fresh blueberries are the BEST! If you’re lucky enough to grow them from your own garden, that’s amazing but picking them up from the local farmer’s market is awesome as well.
Be careful when adding on the fruit. This is especially true for the blueberries. The reason for this is that the blueberry juice will stain and spread to the surrounding whipped cream areas if you’re not careful. I always kind of dry them off a bit before placing them on the cake as this tends to really make a big difference in the overall presentation.
How do layers of graham crackers become a “cake”?
That is the beauty of this icebox cake recipe! The cool whip softenes the graham crackers over time in the refrigerator making them soft like a thin layer of cake! But don’t worry, they won’t get soggy, they just get soft enough that you can east it like a cake!
How to store this ice box cake
Once you make this cake, you’ll need to keep it in the fridge until it’s time to enjoy it. Then after you’ve started eating it, you’ll need to store left overs in the fridge if there are any!
Can you freeze this cake for later?
You bet. However, since it’s such a simple cake recipe, you really don’t have to prep it that much beforehand to freeze.
Keep in mind though that frozen whipped cream is actually an amazing texture to try. There’s just something about it that reminds me of ice cream and cheesecake, combined. (and the frozen blueberries and strawberries are really good, too!)
